Rich, creamy, fresh ricotta.  An extremely useful cheese: filling for lasgna, addition to pasta sauce, dips, burritos, cheese cakes and so much more.   Or simply put some ricotta on toast--maybe add a little honey or pesto (There are really way too many possibilities for this wonderful cheese.)
